Another night of cooking in the Croft kitchen...

Tonight's new recipe was due to the fact that I haven't been grocery shopping so I had to make something with what I have, which isn't much. And I realize the picture isn't very appetizing! But it was actually delicious, Dan went back for thirds and raved about how good it was. He always like the most simple ones, when I try something hard he never really likes it. Funny how that works!

Ingredients I used: 1 1/2 cans of Hormel bean chili, 1 lb hamburger meat, 2/3 cup shredded cheese, 2/3 cup chunky salsa, 6 large tortillas cut in 1" strips, 3/4 cup water. First I browned the hamburger and drained the fat, then added in the chili, HALF of the cheese, salsa, water and tortillas. I mixed it all together and poured it into a large shallow baking dish. Cooked at 400 for 25 minutes, added the rest of the shredded cheese and a dollop of sour cream in each bowl. Easy, not particularly healthy but I made do with what I had and I'm happy with it!

I don't have a lot of time to blog now because I need to go hang out with my sweet little guy before putting him to bed. But I have a lot of great things planned for this week. I'm going to push myself to the limits and feel accomplished. Stay tuned!

Today I decided I needed to cook something delicious with all of the fresh veggies we've been given from friends and family that have gardens. So I came home and whipped up some Summer Vegetable Tian. Mmm-mmm delish!


I used Zucchini, tomatoes, and onions fresh from the garden along with potato. (recipe suggests squash as well.) I started by dicing my fresh onions and sauteing them with 1 tbsp of olive oil and some garlic powder/salt (the recipe actually called for minced garlic.) I thinly sliced the potato, zucchini and tomatoes, sprayed non-stick cooking spray into an 8x8 cooking pan, spread the sauteed onions in the bottom of the dish, then arranged the veggies in two rows. Cooked (400 degrees) for 30 minutes. Then added shredded mozzarella and cheddar cheese and cooked for another 15 minutes. Ta-da! Delightful.

The only problem with my yummy dinner was that Dan doesn't like zuchini OR tomatoes. So...I made him his own dinner. Spaghetti and garlic toast. Boring.



I have to brag a little though, since Dan was out taking care of weeds in the yard, I cooked my veggie tian and Dan's spaghetti all while feeding Jace his carrots and bottle at the same time. Talk about multi-tasking!

On to the next...my little man is 5 months old today! I'm shocked. Where did the past 5 months go?! Check out my sweet little stud:

Jace talks like crazy. He is always chatting it up. He loves the sound of his own voice. He loves being outside. He holds his own bottle most of the time. He rolls over. I find him in the morning in all different positions and facing all different ways. He is happiest in the mornings. He is always smiling and laughing. He loves Rockie! She makes him laugh just by looking at him. He had his first hair cut. More like a little trim to fix up his mullet. He is working on sitting up. He lights up everytime he sees his daddy. We love him like crazy!!!

Seriously. Best five months ever.

And one more thing...we took Jace on his very first camping trip this past weekend! He had a blast and did soooo good. Sure it helped that we had a big fifth wheel with a/c and a cozy bed for him to sleep in.

We went to a place in Idaho called Massacre Rock State Park. It was awesome and beautiful! We did lots of biking, swimming, some disc golf, yummy dutch oven and s'mores...so much fun. I hated to leave!













Good, good times.

Pizzadillas

Tonight was my first "find a new recipe" night. Pizzadillas! Easy and delicious. Except that I might have charred them a little more then planned. But still, pretty darn tasty! Our side was salad with fresh beets, tomatoes and peppers from my dads garden, and some zesty italian dressing. Mmmm delish.

I used: Shredded mozzarella cheese, pizza sauce, sliced olives, mushrooms, pepperoni slices, green peppers. First sprinkle cheese on half of the tortilla, then add the rest of the toppings and then some cheese over top. Fold the empty half of the tortilla over top, and cook on a skillet. Cut in wedges. Wah-la! I used more meat and cheese for Dan, more veggies for me.







And believe it or not, I cleaned up the kitchen while I cooked. How much easier is that? No mess after dinner. Proof:



Since we had a yummy dinner I tried something new for Jace so he wouldn't feel left out.



Carrots! He loved carrots. I couldn't feed him fast enough! He ate over half the bottle.




Delicious food for us all! I'm excited about this new recipe thing. In fact, I've made myself a schedule with my workouts that includes planning menus and grocery shopping better. I'm so tired of spending lots of money buying lots of groceries, and then scraping to get by until we go grocery shopping again months later! Super lame.

My new schedule is on Saturday mornings. 9 am put together a list of healthy meals for the week, including bkfast/lunch/dinner. 10 am Yoga class. 12 pm grocery shop for the week. My new Saturday routine. This might be the end of cereal and take out for dinner!

Now that Jace has been fed and bathed-carrots everywhere-all three of us are going to get in our pj's and watch a movie.



I've been really excited to see this one, looks hilarious! I'll let ya know what I think.
